Ingredients (makes 4 servings)
1 tin coconut milk
1 and a half teaspoons matcha powder
1 tablespoon maple syrup
1 teaspoon vanilla extract
50g chia seeds
30g shredded coconut
Blend together the coconut milk, vanilla, syrup and matcha powder. Then transfer this mixture into a bowl and mix in the chia seeds. Place in the fridge, cling filmed, for about one hour.
Take the pudding out of the fridge and whisk it again, then refrigerate again overnight.
Divide pudding evenly between serving containers. Enjoy!
