So perhaps the greatest calendar date, ever, is just around the corner - Pancake Day! A day dedicated to making and eating pancakes, now that's our kind of day! If you're like the average person and barely leave enough time to eat a breakfast bar before you leave for work in the morning, never mind rustle up some pancakes then we've got the recipe for you. We promise if you set your alarm a measly 5 minutes earlier than usual then you'll have plenty of time to whip up these delicious banana pancakes and time to sit down and enjoy them too!
- 1 medium ripe banana
- 2 large eggs
- ¼ tsp cinnamon
- Put the banana in a bowl and mash with a fork.
- Add the eggs and whisk.
- Add the cinnamon to the banana mix, and stir well.
- Pour ¼ cup of the mixture into a non-stick frying pan, cook on both sides until golden brown.
- Serve (with or without maple syrup) and enjoy!
